Instant Pot Posole

A hearty, flavorful posole with tender chicken, hominy, peppers, and warming spices, finished with fresh lime, crunchy cabbage, and cilantro. Big comfort food energy without standing over a pot all damn day.

I'm all for a dinner that tastes like you've been cooking all afternoon without actually requiring you to do that.

This Instant Pot posole combines chicken breasts (or pork loin), hominy, poblano or Anaheim peppers, onion, garlic, cumin, and oregano in a savory broth.

A little lime juice brightens everything up, and shredded cabbage and fresh cilantro add some crunch and freshness.

You've got protein, vegetables, and a hearty, satisfying bowl of soup. Let the pressure cooker handle the heavy lifting. We have enough other things to do.

02

Cover and secure the lid. Make sure the valve is set to Sealing.

03

Set the SOUP button to 15 minutes.

04

When the cooking time is up, let the pot sit for 10–15 minutes, then move the valve to Venting. Once the pressure has fully released, remove the lid.

Stir in the lime juice.

07

Ladle into bowls and garnish with a handful of shredded cabbage and fresh cilantro.

Enjoy!
