Mama's Mug Cake

Super simple, high protein, tastes like cake. My whole family loves this.

We've all heard we need more protein in our diet. But let's be honest, actually getting it at breakfast can be a pain in the ass.

If you're a sweet breakfast person or sick of eggs and avocado, this mug cake is for you. A little sweetness, some protein, and a breakfast that doesn't need to be a whole production.

Optional Add-Ins

Instructions

  1. Add everything to a microwave safe mug and mix thoroughly with a fork. Use a separate mug for each serving if making several.

  2. Optional add ons to make everything taste fancier (mix these in AFTER you mix up the previous ingredients):

    • Small handful chocolate chips

    • Blueberries or other berries

    • Lemon zest + strawberries (my personal favorite)

    • Nuts, coconut flakes, m&ms….. Go crazy.

  3. Microwave on high for 90 seconds. I’ve made this in a regular oven before as well, and it takes about 20 minutes at 350 degrees.

Enjoy!

Alison's Notes

Lemon zest + strawberries is my personal favorite.

Collagen powder is optional, but encouraged. Feel free to experiment with the other add-ins, too.
