Slow Cooker Beef Stroganoff

Tender beef, mushrooms, and a rich, creamy sauce served over brown rice. All the comfort of beef stroganoff without turning dinner into a whole damn production.

Some days call for comfort food, but that doesn't mean I want to spend my entire evening making it.

This slow cooker beef stroganoff brings together sirloin steak tips or stew beef, mushrooms, onion, and garlic in a savory sauce with beef broth, coconut aminos or gluten-free tamari, and coconut milk.

A little arrowroot or cornstarch helps thicken the sauce, and you can serve the whole thing over brown rice.

Protein, starch, and that cozy, creamy stroganoff goodness. Because eating well doesn't mean we have to make everything from scratch with seventeen pots and a culinary degree.
