Slow Cooker Chicken Cacciatore

Tender chicken simmered with tomatoes, garlic, mushrooms, bell peppers, artichokes, and Italian herbs. A cozy, satisfying slow cooker dinner that doesn't require hovering over the stove like it's your damn job.

Some nights, I want a real dinner without the real effort. Enter the slow cooker.

This chicken cacciatore brings together chicken breasts or thighs, tomatoes, bell peppers, mushrooms, artichoke hearts, garlic, and plenty of Italian herbs in a savory tomato-based sauce.

Serve it over your favorite cooked grain or alongside potatoes, and you've got protein, veggies, and starch covered.

A hearty, flavorful meal that mostly takes care of itself? Yes, please.
