Sausage, Kale, & Sweet Potato Soup

A hearty, cozy soup with savory sausage, sweet potatoes, mushrooms, and kale. Let the slow cooker handle dinner because we have approximately 4,000 other things to do.

I'm a big fan of a soup that's actually a meal. You know, the kind that doesn't leave you rummaging through the pantry looking for something else to eat an hour later.

This one combines turkey or pork sausage, sweet potatoes, mushrooms, and kale in a savory broth with garlic, onion, and herbs.

Brown the sausage, toss everything into the slow cooker, and let it do the heavy lifting. Add the kale toward the end, finish with fresh thyme if you're feeling fancy, and dinner is handled.

Protein, vegetables, and a little starchy goodness in one cozy bowl. That's my kind of dinner.
