Garlic butter tilapia, asparagus, and juicy cherry tomatoes - all on one sheet pan. A simple, flavorful dinner without a sink full of dishes afterward.
I'm all for a dinner that doesn't require juggling five different pans. This sheet pan meal combines tilapia, asparagus, and cherry tomatoes with a garlicky lemon butter sauce and Italian seasoning.
Serve it over your grain of choice for a complete meal with protein, vegetables, and starch.
Minimal dishes, plenty of flavor, and dinner is handled. We love that.

Instructions
01
Preheat the oven to 425°F. Lightly oil a baking sheet or coat with nonstick spray.
02
In a small bowl, whisk together the butter, garlic, lemon juice, and Italian seasoning. Reserve 2 tablespoons of the butter mixture and set aside.
03
Place the asparagus in a single layer on one side of the prepared baking sheet. Toss with 2 tablespoons olive oil and season with salt and pepper to taste.
04
Place the tomatoes in a single layer in the middle of the prepared baking sheet. Toss with the remaining 2 tablespoons olive oil and season with salt and pepper to taste.
05
Place the tilapia in a single layer on the opposite side of the prepared baking sheet. Drizzle with the butter mixture.
06
Bake for 11–13 minutes, until the fish flakes easily with a fork and the tomatoes begin to burst and soften.
07
Serve over your grain of choice with the reserved butter mixture. Garnish with parsley, if desired.
