Slow Cooker Thai Peanut Chicken

Tender chicken, colorful veggies, and a creamy Thai-inspired peanut sauce - all made in the slow cooker. Big flavor, minimal babysitting. Because dinner shouldn't require your undivided attention for three hours.

I'm a fan of meals where the slow cooker does the heavy lifting.

This one combines chicken breast, butternut squash, bell peppers, onion, and peas in a creamy coconut-peanut sauce with red curry paste, ginger, garlic, and a little lime.

Serve it over brown rice, throw some fresh cilantro on top, and you've got protein, vegetables, and starch in one satisfying meal.

A little sweet, a little spicy, and a whole lot more interesting than another sad chicken breast for dinner.

Instructions

01

In a 6-quart or larger slow cooker, whisk together the coconut milk, peanut butter, curry paste, fish sauce, coconut sugar, ginger, garlic, and red pepper flakes until smooth.

02

Add the chicken pieces, squash, red bell pepper, and onion to the slow cooker. Stir gently to coat everything with the sauce. The mixture will be very thick. Cover and cook on HIGH for 2–3 hours or LOW for 5–6 hours.

03

Thirty minutes before serving, add the peas. Immediately before serving, stir in the lime juice.

04

Serve over brown rice with a generous sprinkle of fresh cilantro.

Enjoy!
