Sheet Pan Roasted Chicken with Fall Vegetables

Chicken thighs, roasted fall veggies, and all the cozy flavors in one sheet pan. A complete meal without a sink full of dishes. We love that.

I'm all for a dinner that gets protein, vegetables, and starch onto one pan without making things unnecessarily complicated.

This recipe combines chicken thighs with butternut squash, baby red potatoes, carrots, and Brussels sprouts. The veggies are tossed with olive oil, balsamic vinegar, and garlic, while the chicken gets a mix of herbs and seasonings.

Roast everything together, give it a quick broil for those caramelized edges, and dinner is handled.

Instructions

01

Preheat the oven to 400°F. Lightly oil a baking sheet or coat with nonstick spray.

02

Season the chicken with oregano, thyme, basil, rosemary, salt, and pepper to taste. Set aside.

03

Place the butternut squash, potatoes, carrots, and Brussels sprouts in a single layer on the prepared baking sheet. Stir in the olive oil, balsamic vinegar, and garlic. Season with salt and pepper to taste. Top with the chicken in a single layer.

04

Place in the oven and roast until the chicken is completely cooked through, reaching an internal temperature of 165°F, about 25–30 minutes. Then broil for 2–3 minutes, or until caramelized and slightly charred.

05

Serve immediately, garnished with parsley, if desired.

Enjoy!
